It's one of those Perfect Veggies -- flexible, flavorful, cheap, and super simple to use. I almost always use it as a crunchy wrap -- stuffed with BBQ chicken, peppers, shredded carrots, marinated tofu, and -- perhaps my biggest weakness -- with crumbled feta and whatever leftover veggies I have in the bin. Pretty much anything goes with this stuff. Butter lettuce and leftovers are a match made in heaven for busy parents. I've stuffed these leaves with fried rice, tempeh, and even sticky sushi rice. They can be deliciously low carb or not at all. The possibilities are endless!
In addition to being yummy, butter lettuce is pretty inexpensive -- I scored my head at Stop n' Shop for $2.99. It's chock full of vitamin A and phosphorus, and its calorie count is negligible.
