And while my snacks often consists of dreamy dark chocolate/acai/blueberry treats from Brookside, I know refueling with a combo of healthy fats and carbs will boost my stamina, and keep me going through seemingly endless, post-nap games of Tag. One of my fave ways to nosh? Seaweed. I love nori stuffed with tuna, veggies, turkey, hardboiled eggs, or leftover BBQ chicken. The possibilities are limitless.
Next to nori, other sea vegetables can be thrown together to make a simple, lettuce-free salad. I found this recipe on PBS.org that requires just a handful of ingredients. I omitted the ginger juice (didn't have any), and I swapped out the scallion for a green onion, and it turned out swimmingly. Even better? It is chock full of fiber and blood-boosting iron.
