My cold transformed, rather unceremoniously, I might add, into an annoying stomach bug, which has left me with zero appetite, and therefore, my family has subsisted on bagged salads and scrambled eggs this week. Boo...
So given this less-than-awesome plight, I wanted to share some super simple recipes for when you just.can't.muster.the.energy. These take less than 15-minutes, so you can drag yourself from the couch (where your toddler has been watching a little *too* many episodes of Angelina Ballerina), stand at the stovetop for a few, and return to the couch in less than 20. Cross my heart.

Chicken and Rice Soup with Lemon and Ginger -- courtesy of MyRecipes.com ( I added carrots and celery to this, for a little added color).
The soup is especially nourishing/soothing during these bitter winter months, and all pack a punch, nutritionally. Tons of fiber, protein, and other body-building stuff like folate.
