I stumbled upon these Vietnamese Brown Rice Spring Roll Wrappers on sale for a mere $1 at my local market, so I snapped 'em up. They were a breeze to prepare, but they are quite flimsy and tear easily, so be gentle when you handle them. Simply soak in warm water for about a minute, until they soften up a bit. Place them on a paper towel for drying, and voilà! Ready to be lovingly wrapped with whatever veggies or meats you have on hand.
We had some turkey slices to use up, so we sliced them into small strips and added chopped cilantro, shredded carrots, a bit of fresh spinach, and some sweet peppers. I whipped up a little peanut dipping sauce with a few tablespoons of natural peanut butter, a splash of sesame oil, and a bit of chicken broth.
Sooooo good, healthy, and just ridiculously simple to make. This is also a great late afternoon project to do with a toddler. My daughter loves to help out in the kitchen, and she became a whiz with soaking the wrappers.
Her review of the finished product? "Yummy, Mama!"
