
Gah. It's been about 5 months since I've done my due diligence with Go Fit Mama. It was a harried, hurried fall and holiday season, but now I'm back. Yay.
I'll just jump right in with a smattering of my favorite eats these days. I'm talking the stuff I can quickly grab out of my fridge or pantry, steam/chop/tear/bake, and savor the yumminess.
I'm loving these bags of Trader Joe's Organic Power to the Greens. I've been adding them to easy homemade vegetable soups, or, in a pinch, to another TJ fave, the scrumptious Organic Lentil Vegetable Soup. Simple tear up pieces of the power greens, and toss them into your pot of simmering sustenance.
Or, if you're like me and cannot get enough of anything I can spice up with sriracha, I simply steam up the greens until they are lightly wilted, mix up a bold dressing with a little soy sauce, sesame oil and a dash of sriracha, and lightly toss the greens to coat. Brazen and beyond simple. I scarfed this down for dinner tonight.
Other cold weather faves? My favorite black bean soup recipe from Allrecipes.com, and these delish Mini Crustless Kale and Broccoli Quiches by Katie at Good Life Eats.
Starting the year on a beautiful simple and healthy note sounds just about perfect, don't you think?
