It's been a happily productive time, work-wise, but severely lacking in the blogging department. I vow to do better.
One of the biggest hurdles with balancing work and stay-and-work-at-home life is whipping up healthy snacks from scratch. I am eternally looking for ideas in this area. My toddler LOVES to eat, and she has a voracious appetite. It's always tough not defaulting to a secret stash of Pirates Booty when she gets the post-nap cranks.
A favorite of hers -- and mine! -- is dried fruit. Lately, in addition to the usual suspects of apples, kiwis and pears, we've dried bananas (soooo good), grapes (sort of an acquired taste, but I love them), and sliced pineapple. Our Nesco dehydrator gets a workout during these chilly winter months. It's a great way to sneak in some extra vitamins while getting a healthy sugar high.
Post drying, I cut up the fruit into little pieces, add in lightly salted pepitas, almonds, or slivered coconut, and YAY! Healthy eats.
