True, it's so not sexy, but I have a thing for these unassuming, often-overlooked legumes. Tiny and soft when cooked, and always earthy in texture and hue, lentils are versatile, yummy, and primo for health. They help lower cholesterol, can help manage blood-sugar disorders, and pack a wallop of nutrients -- specifically, B-vitamins and protein.
These glorious pod-like seeds routinely make the rounds in my meal prep. And with this week's pre-holiday craziness and back-to-back fitness classes, I needed something quick and easy to fill and fuel me up.
Lentil soup to the rescue!
While it's not cold-cold yet, I am one of those people who can always nosh on soup, even when it's warm and sticky outside. One of my favorite soup recipes is this easy-peasy one from Allrecipes.com. It's entirely customizable, so you can add extra veggies and/or spices if you like. My family loves garlic and spinach, so I added those extras and a healthy sprinkling of paprika.
It was the *perfect* pre-workout meal -- it filled me up without making me sluggish. It's delish on a chilly night, too.
