I admit it -- I love this stuff. I realize it's an acquired taste (it can be bitter), but for those of you who think you can't stomach this green, I have found a super simple way to prepare it, and it's a hit with the fam.
I've seen tons of variations on this recipe, but I'm gonna keep it simple:
- Tear fresh kale leaves into bite sized pieces (any variety of kale works well in this recipe), and place loosely in a medium-sized mixing bowl.
- Toss kale pieces with about 1/4 of a cup of olive oil or avocado oil, along with a splash or two of red wine vinegar, and whisk it together with 1/4 of a cup of your favorite honey.
- Throw in two handfuls of unsweetened dried cranberries.
- Toss in a handful of raw pine nuts, and sprinkle the salad with as much grated parmesan cheese as you like.
This salad is awesome as a light lunch, or to accompany your favorite main dish at dinner. My toddler *loves* it, thanks to the sweetness of the honey, I'm sure.
