Pita and I are buddies. Whenever I am particularly ravenous/slammed for time, I grab one of Joseph's Heart Friendly Pitas, stuff that sucker with any myriad of veggies, lean turkey, and a handful of shredded cheddar, drizzle on lil dressing, and chow down. Today, after a long morning of late coffee (due to a fasting sesh before getting my cholesterol checked), my blood sugar and mood were plummeting pretty much simultaneously. Throw in a still-sick toddler and super cold temps, and it was a doozy.
Once I had tucked her in for a snooze, I grabbed a pita, filled it with lettuce, a smattering of cheese, two sliced of rotisserie turkey, and drizzled it with BBQ sauce (I love Annie's Original). I inhaled it in less than 2 minutes.
Headache? Gone. Mood? Better? Tummy? Satisfied.
Pitas are incredibly versatile, pretty low calorie, and entirely customizable. I've stuffed these tasty pockets with everything from hummus, olives, and falafel to leftover chicken and spicy salsa. Anything goes!
