Stop. Breathe. And Veg(gie) Out. Sort of.
I'm talking about one of my favorite go-to things to whip up when I'm starving -- a quick green salad stuffed with whatever I've got in the crisper. Actress Kristen Bell aptly named it the "Garbage Disposal Salad" in a Self magazine profile back in 2012. It's a perfect name for whatever you have in the veggie and fruit bin of your fridge: greens, carrots, berries...you name it. What I love about this kind of "dump lunch" is it takes just a couple of minutes to prep, it's wholesome, and delightfully filling.
Sure, it takes less time to rip open a bag of chocolate candies or chips, but I try to aim for a healthy afternoon -- no matter how how many spills n' screams permeate my day.
I whipped up this concoction today, in about three minutes:
- Green leaf lettuce, torn into bite-sized pieces
- Carrots, peeled and sliced
- A handful of pepitas
- Another handful of dried cherries (too lazy to look for the dried cranberries)
- A sprinkling of grated cheddar cheese
I topped it off with a drizzle of avocado oil and balsamic, and dug in. Absolutely delicious.
