But that's a good thing! Less candy means more time for futzing around with veggies and dreaming up semi-wacky ways to get more of the green stuff into my family's diet.
My latest craze is the beloved cucumber. I'm not sure what it is about these humble gourds, but I'm obsessed. Sure, they are super simple to toss into a mixed green salad, but I'm often too scattered/lazy to prep something I'm gonna devour in mere seconds. Thankfully, a cuke doesn't need to hug a lot of other vegetables to make it sing. Lately, I've just been peeling it, chopping it up, and adding a splash of Bragg Liquid Aminos (or low-sodium soy sauce), a scant tablespoon of sesame oil, and a sprinkling of sesame seeds.
It makes a surprisingly filling snack. Or, add a cuppa tomato soup on the side and you've got a refreshing, get winter-y lunch that will fuel your afternoon.
